Can someone explain to me what the differences between ElasticSearchV7 and ElasticSearch Integration are and why I should choose one over the other?

Can't speak to the difference, but we heavily use the V7 version successfully

Depends on you Elastic version. If you have version 5 then use ElasticSearch. for version 7 use ElasticSearchV7
